Where rice grew poorly at altitude, buckwheat became the staple. Togakushi soba is the most renowned.
About this place
Shinshu soba generally refers to the buckwheat noodles made in Nagano Prefecture. In 1983 (Showa 58), Nagano Prefecture selected them under the name 'hand-made soba' as a Nagano Prefecture Selected Intangible Folk Cultural Property, 'Cultural Property of Taste'. It is made in Nagano's cool and rich natural environment, and as it is often grown in high-altitude areas, fog is said to prevent frost, giving buckwheat of good flavour.
