Every kitchen in the world has vinegar, and the choice is wide: Japan's rice vinegar, grain vinegar and black vinegar, the West's wine vinegar and balsamic, China's Zhenjiang vinegar. Two questions come up again and again: "which one should I use?" and "is vinegar good for you?" Here we answer both from Japan's standards and labelling rules.

[Verify] Check the JAS raw-material standards against the Ministry of Agriculture, Forestry and Fisheries' "Japanese Agricultural Standard for Table Vinegar".
Vinegar does have some antibacterial action, but the concentration and time needed to kill food-poisoning bacteria reliably are not realistic in home cooking; the Ministry of Health, Labour and Welfare's basics are heating, chilling and cleanliness. Sushi rice and vinegared dishes do not "keep longer".
No health claim may be made for black vinegar sold as an ordinary food. Products notified as Foods with Function Claims may use only the wording covered by the notification.
The raw material and aroma differ; the usual practice is rice vinegar for sushi rice and grain vinegar for light vinegared dishes. They can stand in for each other.
Unopened, it keeps for a long time at room temperature, but once opened, oxidation and loss of aroma set in; use it up within 6 months to 1 year. Many fruit vinegars carry a "refrigerate" instruction.
For cleaning, use cheap grain vinegar (or citric acid). Never mix it with chlorine-based cleaners (toxic gas); the same rule applies to citric acid (see the article on baking soda and citric acid).
