Overview
Konotomo Sake Brewery in Tajima. It brews locally.
About this place
Konotomo Shuzo Co., Ltd. is a sake brewer founded in 1690 (Genroku 3) in Yanaze-cho, Santo-cho, Asago, Hyogo Prefecture. It carries on the tradition of the Tajima toji. Aiming at sake made 100% from locally grown Yamada Nishiki, it is reviving Tajima-grown Yamada Nishiki that had ceased to be cultivated. From rice washing to brewing, everything uses groundwater from Mount Awaga, on the border of Tajima and Tamba. The only company in Tajima that can make local shochu. It makes a shochu of five-grain rice (rice, barley, buckwheat, foxtail millet and proso millet), rare even nationwide, sold under the product name "Ame no Hihoko."
