About this place
Shiba Zushi Co., Ltd. is a sushi bento maker with its head office in Kanazawa, Ishikawa Prefecture. It is known for selling Sasa Zushi, pressed sushi wrapped in bamboo-grass leaves. Kajitani Tadashi (1913 - 30 November 2010) ran a Toshiba showroom, established in 1947, in the Katamachi entertainment district of Kanazawa. He boosted sales with demonstrations of electric rice cookers, but was left with large amounts of cooked rice that he did not know how to dispose of. He came up with the idea of turning it into pressed sushi, eaten on festive days around Kanazawa, and selling it.
