Overview
A soy-sauce brewery in Shodoshima, keeping to wooden-vat brewing, which accounts for under one per cent of production.
About this place
A soy sauce brewery in Kagawa Prefecture where you can see wooden-barrel brewing, which accounts for less than 1% of soy sauce production. Through the wooden barrels, home to lactic acid bacteria and yeast, and the moromi storehouse, you can learn the traditional method, and no reservation is needed. At Yamaroku Chaya under the eaves there are grilled rice cakes (winter only) and soy sauce desserts.
