Frozen food consumption keeps rising in Japanese homes, and the same questions come up again and again: "Can I refreeze something I have thawed?", "Do I throw it out if it has frost on it?" and "Can I eat it after the best-before date?" Here we look at how frozen food is defined in Japan and at the limits of a home freezer.
| Item | Detail | Source |
|---|---|---|
| Definition of frozen food | Pre-processed, quick-frozen, stored and distributed at −18°C or below, and packaged | Japan Frozen Food Association; Food Sanitation Act |
| Home freezers | The target is around −18°C, but the temperature swings with every opening and the door side is warmer | Association for Electric Home Appliances |
| Best-before date (賞味期限, shōmi-kigen) | Unopened and kept at −18°C or below: the date on the pack (usually 1 to 1.5 years). Once opened, use within about a month (drying, oxidation) | Japan Frozen Food Association |
| Frost and freezer burn | Frost inside the bag = the temperature rose and it refroze, or moisture got in when opened. White, dry patches = freezer burn. Safe to eat, but quality is lower | Same |
| Refreezing | Refreezing something once thawed risks lost quality and bacterial growth. Most packs carry "Do not refreeze" (再冷凍しないでください) | Same |
| Cooking | "Heat before eating" (加熱してお召し上がりください) means the food was not cooked before freezing, or cooking is assumed. "Thaw and eat" (解凍してそのまま) means it can be eaten without cooking | Food labelling |
| Microwave | Follow the wattage and time on the pack. A cold centre means it is under-heated (a cause of food poisoning) | Same |
| Getting it home | Buy frozen items last, use an insulated bag and put them straight in the freezer. In summer the surface thaws within 30 minutes | Same |
[Verify] Check consumption figures against Japan Frozen Food Association statistics, and the meaning of the labels against the Food Labelling Standards.
Drying and oxidation continue, and a home freezer does not hold a steady temperature. Use within the date, and within a month of opening.
It is a sign of lost quality, and usually still safe to eat. Throw it out if there is heavy frost, a torn bag, discolouration or an off smell.
Lost quality and bacterial growth. Many products are designed so you take out only what you need (portion packs).
"Heat before eating" means cooking is assumed. Check the label and heat until the centre is hot.
In a car in summer the surface thaws within 30 minutes, and refreezing lowers quality. Buy it last, use an insulated bag and freeze it at once.
