What people have long eaten in this place. We collect the dishes themselves, not restaurants.
Rolled sushi in which egg, dried gourd strips, pickled greens and pink denbu fish flakes are rolled up with sushi rice and nori seaweed so that a pattern such as a flower appears on the cut surface. It has been made for festivals, seasonal celebrations and ceremonial occasions.

Horse mackerel flesh is combined with miso, chopped green onion, ginger and shiso leaf, and chopped with a knife until it becomes sticky. It is also made with saury, bonito or squid. Since it does not keep, it is eaten as soon as it is made.

Namero made from horse mackerel or mackerel is grilled on an iron griddle, or packed into scallop or abalone shells and grilled on a rack. If the namero is chopped enough to bring out its stickiness, it grills up tender.

Freshly harvested raw peanuts, still in their shells, are boiled for 40 to 50 minutes in water with about 3 percent salt added. Once boiled, they are drained in a colander and left to cool.

A standing side dish of peanuts seasoned with miso, sugar and other seasonings. It is put on rice, or eaten with tea or as a snack with sake. To keep it less sweet, mirin is used to thin the miso instead of sugar.

Japanese anchovies have their heads and innards removed and are washed, salted and pressed under a weight to draw out the moisture, then pickled with roasted sesame seeds, red chili pepper and ginger. They are ready to eat in two or three days.

A New Year's zoni soup in which grilled or boiled mochi is put in a bowl and broth is poured over it, then a generous amount of a mixture of habanori, a dried seaweed from the Boshu area, green laver and dried bonito flakes is sprinkled on top.

The seaweed kotojitsunomata is washed, boiled in water until it thickens, poured into a mold, chilled until set and cut into pieces. It is eaten with soy sauce poured over it and dried bonito flakes, green onion and chili pepper on top.

Whale meat is steeped in a sauce of soy sauce, sake and ginger so that it takes on the flavor, then dried until it is only half dry. It is grilled over a flame when eaten.

Sardines filleted into three pieces are ground in a mortar, mixed with grated Chinese yam, beaten egg and miso and formed into balls, which are dropped into a pot in which daikon, carrot and taro have been simmered, and cooked. Long green onion is scattered on at the end.

A thin sushi roll made by laying toasted nori seaweed on a bamboo mat, spreading rice over it and rolling it up around a center of dried bonito flakes dressed with soy sauce.

A soup in which asari clams that have been purged of sand are brought to a boil in kombu dashi and, once they open and release their broth, a small amount of miso is dissolved in. The clams are heaped up in a bowl and eaten together with the broth.

Two shrines across the Tone river share one story: this was a region joined by water, not divided by a border.
