Guzouni/Shimabaraguzouni
A zoni soup packed with ingredients, cooked in an earthenware pot of dashi with round rice cakes, chicken, Chinese cabbage, carrot, burdock, dried shiitake mushrooms, freeze-dried tofu, grilled conger eel and rolled omelet.

Champon
A noodle dish in which pork, squid, shrimp, clams, fish cake, cabbage and bean sprouts are stir-fried, then simmered together with the thick noodles made for this dish in a rich soup.

Plate Udon
A dish that combines noodles with a topping of stir-fried pork, seafood and vegetables. In one version a thick sauce is poured over deep-fried thin noodles; in another, thick noodles are stir-fried until the liquid is gone.

Omura-zushi (Omura Sushi)
Sushi made by spreading generously sweetened vinegared rice in a shallow wooden box, layering fish cake, carrot, burdock, dried gourd strips and shredded thin omelet on top, pressing it, and cutting it into squares.

Rokubei
A dish of thick noodles, made by kneading flour produced from sweet potato with Japanese yam added as a binder, served in clear soup.

Jigokudaki (Goto Udon)
A way of eating in which dried Goto udon noodles are boiled in an iron pot, scooped straight from the pot, and dipped in beaten egg mixed with flying fish dashi and condiments.

Kankoro Mochi
A stick-shaped rice cake made by pounding glutinous rice together with kankoro, sweet potato sliced thin and dried in the sun. It is sliced and grilled before eating.

Hikado
A soup in which yellowtail, chicken, daikon, carrot and dried shiitake mushrooms are cut into small pieces and simmered, seasoned with soy sauce, and thickened with grated sweet potato.

Nagasaki Tempura
Shrimp, chicken and seasonal vegetables are coated in a seasoned batter of wheat flour with sugar, salt, soy sauce, egg and sake, and deep-fried. Because the batter itself is seasoned, it is eaten without dipping sauce.

Hatoshi (Fried bread with shrimp paste)
A dish of minced shrimp paste sandwiched between slices of bread and deep-fried in oil. It was handed down as one of the dishes of shippoku cuisine.

Lemon Steak
Thinly sliced beef loin is grilled on an iron plate and finished with a sauce of grated onion and garlic, soy sauce and lemon juice.

Kanzarashi (Sweet glutinous rice flour dumplings)
A sweet of small dumplings made from glutinous rice flour, chilled in the spring water of Shimabara and topped with a syrup made from coarse sugar or ordinary sugar.

Michi-no-Eki roadside stations
Rest facilities registered by Japan's national government. Each has parking and toilets open 24 hours, and by definition includes a facility that sells local products. This is where the making and the food of this prefecture can actually be bought.

Oura Tenshudo
The oldest surviving Christian building in Japan, and a National Treasure. In 1865 hidden Christians declared their faith to a priest here, an event known as the Discovery of the Believers. For two hundred and fifty years the faith had been passed on without a single priest.
Dejima
The only window open to the West during the closed-country years. A fan-shaped artificial island.
Shimabara Yusui
Groundwater from Unzen rises all over the town. Carp swim in the channels.
Nagasaki Peace Park
The right hand of the Peace Statue stands for the threat of the bomb, the left for peace.
Mt. Inasa
The ten-million-dollar night view. The basin shape of the land stacks the lights.

Nagasaki Kunchi festival opens with six dancing districts
Nagasaki Kunchi, the autumn grand festival of Suwa Shrine, runs from October 7 to 9. This year six dancing districts, including Imakago-machi and Chikugo-machi, present performances such as the dragon dance, the river boat and Kokkodesho.

In Chile's Patagonia National Park, a women-led ranger team returned 13 Darwin's rheas to the wild in April 2026. Working with the Rewilding Chile Foundation, they care for the birds around the clock; surveys once estimated only about 11 to 15 remained.

A new dinosaur species, Musango matusadonaensis, has been described from rocks about 210 million years old in Matusadona National Park on the shore of Lake Kariba, Zimbabwe. The bipedal, not-yet-adult animal was about 4.5 metres long, and the find suggests Zimbabwe's dinosaur fauna differed from South Africa's.
