Itadaki

Large triangles of fried tofu stuffed with raw rice, burdock, carrot and dried shiitake, then cooked slowly in dashi. They have long been packed with plenty of filling so that a small amount of rice is enough to fill you up.

Daisen okowa

Glutinous rice combined with chicken, dried shiitake, burdock, carrot, konjac, chestnuts and chikuwa fish cake, then steamed together with a broth seasoned with sugar and soy sauce.

Area:Western area (around Mt. Daisen)

Dondoroke-meshi

Tofu is stir-fried first, then burdock, carrot, dried shiitake, shredded konjac and fried tofu are added and fried, after which rice and dashi are combined and cooked together. A lightly seasoned mixed rice.

Kakinoha zushi

Rice mixed with vinegar dressing is shaped by hand, topped with thin slices of salted trout soaked in vinegared water and sansho (Japanese pepper) berries, and wrapped in a persimmon leaf.

Oyagani no misoshiru (Miso soup with snow crab)

Female snow crab split in half in the shell, put in from cold water and simmered with daikon, with miso stirred in after the heat is turned off. Not many other ingredients are added.

Igisu

Igisu seaweed soaked in water, simmered over very low heat until it dissolves, then poured into a container and left to set as it cools. Cut into pieces and eaten with vinegared miso or ginger soy sauce.

Azuki zoni

A sweet zoni soup: adzuki beans are soaked to draw off their harshness, boiled until soft and sweetened with sugar, then round mochi boiled in a separate pot is added.

Rakkyo-zuke (Pickled Rakkyo Bulbs)

Rakkyo grown in sand dunes is salted for more than two weeks so that it ferments with lactic acid, desalted, then pickled in sweet vinegar or similar. There is also a method that skips the salting stage.

Ita Wakame

Wakame is washed in water soon after it is cut, and the fronds are spread out one by one, laid side by side and dried at a low temperature for about a day, making sheets of dried wakame. Eaten as it is, or lightly toasted and scattered over rice.

Hatahatazushi/Shirohatazushi (Japanese sandfish stuffed with soy pulp)

Sandfish opened along the back and cured with salt and seasoned vinegar, with toasted, seasoned okara packed into the belly and left for several days to settle. Cut into pieces and eaten with soy sauce.

Tottori

Hakuto Jinja

Held to be the setting of the White Hare of Inaba in the Kojiki. Okuninushi helped a hare whose skin had been stripped off by sharks, and that hare then brought Okuninushi and Yagamihime together. That is why it is counted among the oldest matchmaking shrines in Japan. The stage of the myth is right there on the map.

Women rangers return Darwin's rheas to the wild in Chile

In Chile's Patagonia National Park, a women-led ranger team returned 13 Darwin's rheas to the wild in April 2026. Working with the Rewilding Chile Foundation, they care for the birds around the clock; surveys once estimated only about 11 to 15 remained.

Matusadona National Park, Zimbabwe

New 210-million-year-old dinosaur species named from Zimbabwe's Lake Kariba shore

A new dinosaur species, Musango matusadonaensis, has been described from rocks about 210 million years old in Matusadona National Park on the shore of Lake Kariba, Zimbabwe. The bipedal, not-yet-adult animal was about 4.5 metres long, and the find suggests Zimbabwe's dinosaur fauna differed from South Africa's.
