Local food
What people have long eaten in this place. We collect the dishes themselves, not restaurants.
Houtou
A noodle dish in which wide noodles, made by kneading wheat flour and cutting it into broad strips, are simmered with pumpkin, potato, daikon, carrot, Chinese cabbage, shiitake mushrooms, long green onion and fried tofu in a dashi of dried sardines, and seasoned with miso. The noodles are simmered as they are, without being parboiled.

Yoshida no Udon
A firm, chewy udon made by kneading medium-strength wheat flour dough by treading on it with the feet and cutting it into strips about 5 millimeters wide. It is eaten in a broth of dried sardine and dried bonito dashi combined with miso and soy sauce, topped with steamed cabbage and horse meat simmered sweet and savory.

Chicken Motsuni
Chicken liver, gizzard, heart, unlaid egg yolks and oviduct are boiled down in a thick sauce of soy sauce and sugar brought to a boil, driving off the moisture until the dish takes on a glossy sheen.

Awabi no nigai
A preserved food of abalone simmered in soy sauce until the flavor soaks in. It is sliced thin and arranged with the liver, shiso leaf and cucumber to eat. It has a history of being carried from Suruga Bay to Kofu, which has no sea.

Seida no tamaji
Small potatoes with their skins on are deep-fried until the skins wrinkle, then simmered in dashi with miso, sugar and mirin added, and cooked down until the liquid thickens.

Mimi
A soup in which dough kneaded from wheat flour and left to rest is cut into 5-centimeter squares, with two corners joined to make the shape of a winnowing basket, then simmered in a dashi in which daikon, carrot, taro, burdock, shiitake mushrooms and long green onion have been cooked, and seasoned with miso.

Amanatto no osekihan
Sekihan red rice made by combining glutinous rice and regular rice, coloring it with red food dye and cooking it, then placing sweetened amanatto beans on top when it is done and letting it stand and steam. It is eaten with sesame salt sprinkled on.

Korogaki
Dried persimmons made by peeling astringent persimmons harvested around November, hanging them on strings to dry in the sun under the eaves, then wrapping them between layers of rice straw and leaving them until a white powder forms on the surface. They are also put into namasu vinegared salad or made into tempura.

Ozara
Noodles made by kneading wheat flour with salt and lukewarm water, resting the dough, then cutting it into thin strips, boiling them and chilling them in cold water. They are eaten dipped in a hot broth full of ingredients such as meat, seasonal vegetables and mushrooms.

Basashi
Raw horse meat is sliced thin, topped with condiments such as grated ginger, grated garlic, green onion and wasabi, and eaten with soy sauce.

Tsuki-no-Shizuku
A sweet in which Koshu grapes, still on their stems, are dipped in a sugar coating made by boiling down and working sugar and water, then chilled until set.

Nama-Yuba
Soy milk, made by boiling and pressing soybeans, is brought to a boil and the film that forms on the surface is skimmed off. It is cut into bite-sized pieces and eaten with wasabi soy sauce. There are types that differ in thickness and texture.

Kitaguchi Hongu Fuji Sengen Jinja
The start of the Yoshida trail up Mount Fuji. This was the road the Fuji-ko pilgrims of the Edo period took to the summit. A component of the Fujisan World Cultural Heritage site.
Bodaitei
Two hundred and eighty-seven stone steps, built to mean that climbing them brings you to nirvana.
Tsutsujigasaki
It is said Shingen raised no castle, holding that people were his castle and his stone walls. The site of his residence is now Takeda Jinja.
Fuji Five Lakes
Fuji seen from Lake Motosu is the design on the old thousand-yen note, the Noguchi Hideyo bill. The lakes formed when eruptions dammed the valleys.
Shosenkyo
A granite gorge, with Kakuenpo and Senga Falls. It was also crystal country.

Yamanashi Prefecture and partners will hold the 2026 'Zatto-ten' art walk from October 17 to 26 at six galleries and shops in central Kofu. More than 500 works by 10 artists from inside and outside the prefecture will be shown, with free entry and no booking needed.
