Jingisukan
Mutton and vegetables grilled on a domed cast-iron pan. Some marinate the meat before grilling; others dip it in sauce after.

Miso Ramen
A rich miso broth with medium-thick curly noodles, topped with stir-fried onion, bean sprouts and minced meat. It is said to have been created at a Sapporo shop in 1955.

Soup Curry
Curry not thickened with flour: a thin, spiced broth of chicken bones and vegetables, with large pieces of vegetable and meat. Rice is dipped into it.

Zangi
Bite-sized chicken marinated in a sweet-salty mix of soy sauce, sake, ginger and garlic, dusted with starch and fried. The marinade is notably strong.

Ishikari Nabe
Chunks of salmon, including the trimmings, simmered with daikon, cabbage and spring onion in a kombu-dashi miso broth.

Sanpei-jiru
Salted salmon, cod or herring simmered with potato, daikon and carrot in kombu broth. The salt in the fish carries the seasoning.

Sake no Chanchan-yaki
Salmon steamed on a hot plate with cabbage, onion and carrot under a miso sauce.

Butadon
Thickly sliced pork grilled and glazed with sweetened soy sauce, served over rice.

Ikameshi
Squid bodies stuffed with rice and simmered in soy sauce, sugar, salt and sake. It is said to have begun as a station lunchbox at Mori during the war.

Ruibe
Salmon or trout frozen, then sliced thin while still frozen and eaten as sashimi. It comes from an Ainu method of preserving fish.

Matsumae-zuke
Shredded dried squid and kombu steeped in soy sauce, sake, mirin and sugar as a preserve. Some versions add herring roe.

Imo Mochi
Boiled potato mashed with potato starch, shaped into rounds and pan-fried in butter. Eaten with a soy and sugar glaze.

Nishin-zuke
Dried herring layered with daikon, cabbage, carrot and chilli, pickled and fermented with rice koji and salt. A winter preserve.

Bibai Yakitori
Chicken offal, skin, liver and gizzard threaded onto one skewer with onion and grilled with salt and pepper. Onion is used rather than spring onion.

Muroran Yakitori
Despite the name, pork shoulder alternated with onion on the skewer, grilled with a sweet glaze and served with mustard.

Ikura no Shoyu-zuke
Autumn salmon roe separated from its membrane and steeped in soy sauce and sake. Served over rice as a bowl.

Beko Mochi
White and dark dough of rice flours with sugar or brown sugar, joined together, pressed in a wooden leaf mould and steamed. Made for the May festival among other occasions.

Crab, usually hanasaki crab, simmered in kombu broth and seasoned with miso, with tofu and spring onion added.

Michi-no-Eki roadside stations
Rest facilities registered by Japan's national government. Each has parking and toilets open 24 hours, and by definition includes a facility that sells local products. This is where the making and the food of this prefecture can actually be bought.

Hokkaido Jingu
Founded by decree of Emperor Meiji as guardian of the frontier. Barely 150 years old, yet no shrine in Hokkaido draws more worshippers. It enshrines the three deities of land development.
Esashi Togyosai
Said to be the oldest festival in Hokkaido. Floats parade the town in thanks for a good herring catch.
Goryokaku
Japan's first Western-style star fort, and the final stage of the Battle of Hakodate.
Otaru Canal
A canal built for loading cargo. Stone warehouses stand mirrored in the water.
Shiretoko Goko
Five lakes scattered through primeval forest. The trail runs through brown bear country.
Noboribetsu Jigokudani
The remains of an explosion crater 450 metres across. Nine kinds of spring water rise here.

Ainu culture hub 'Chirotto' opens in Makubetsu, Hokkaido
Chirotto, a new hub for Ainu cultural exchange, opens on October 1 in the town of Makubetsu, Hokkaido. On September 30 a completion ceremony was held at its core facility, the town's Ainu Culture Exchange Center, where an Ainu group performed Ashiri Chise Nomi, the traditional rite celebrating a new building.

In Chile's Patagonia National Park, a women-led ranger team returned 13 Darwin's rheas to the wild in April 2026. Working with the Rewilding Chile Foundation, they care for the birds around the clock; surveys once estimated only about 11 to 15 remained.

A new dinosaur species, Musango matusadonaensis, has been described from rocks about 210 million years old in Matusadona National Park on the shore of Lake Kariba, Zimbabwe. The bipedal, not-yet-adult animal was about 4.5 metres long, and the find suggests Zimbabwe's dinosaur fauna differed from South Africa's.
